			<content:encoded><![CDATA[<p>I use this great recipe and thought you might enjoy.</p>
<p><strong>Thyme Mashed Potatoes</strong> Boil your potatoes until tender, drain and return to pot. Add butter, 6 TBL cream &amp; about 1 1/2 TBL minced fresh thyme, mash and season with salt/pepper.</p>
<p><strong>Balsamic Butter Sauce</strong>1/4 cup balsamic vinegar, 1 garlic clove &#8211; simmer in small saucepan over medium until reduced to thick syrup, about 5 minutes. Set aside.</p>
<p>Heat 1 &#8211; 2 TBL olive oil in large skillet over high. Sprinkle fish with salt &amp; pepper. Saute <strong>Talapia</strong> until golden, about 2 minutes per side.</p>
<p>Re-heat Balsamic syrup over medium-low heat. Whisk in 1/2 cup of butter.</p>
<p>Place potatoes on plate, place tilapia on top to side of potatoes and drizzle with Balsamic Butter Sauce. If you want Sugar Snow Peas are great with this dish. Just steam and add a little butter before serving.</p>
